Easter weekend = carrot cake season 🥕


Happy Saturday Reader!

We celebrate both Passover and Easter, which means lots of family time over here… and lots of good food.

For Passover, we're hosting a (late) seder at our house tonight. Lucky for me, my MIL handles most of the cooking so she’s making her brisket, matzah ball soup, and her famous charoset, which is my absolute favorite.

I’m making a few things as well including the best coconut macaroons (these are always highly requested), a Passover cake (using a GF mix Isaac found), plus a couple simple veggie sides like roasted asparagus and this Syrian salad to round out the meal.

And then for Easter Sunday, we’re hosting brunch with my dad and his girlfriend and keeping things simple, but still really yummy. I’m planning to make my cottage cheese quiche with a gluten-free crust, a big mixed berry fruit salad, and my gluten-free lemon poppyseed muffins. Yum!

With all this cooking, I'm not sure I'll have the energy for a proper meal prep but I still put together some recipe ideas for the week... lots of carrot cake vibes!
