Easy meals, brunch ideas + a few things I'm eyeing on sale

Hi Reader, happy Saturday!

With Mother's Day right around the corner (hi, it's tomorrow!), I wanted to pop in with a little something for all the moms, soon-to-be moms, and anyone who loves and celebrates a mom. Whether you're hosting brunch, bringing a dish, or just treating yourself (fully valid), I've got you covered.

If you're still looking for last-minute brunch ideas, I put together a collection of my favorites on the site. Think crowd-pleasing, make-ahead friendly, and nothing too stressful the morning of.

And as always, I've got a fresh roundup of easy, feel-good meals for the week ahead, plus a couple things I've been loving lately. Let's get into it!

| BREAKFAST

Blueberry Yogurt Muffins

Soft, fluffy, and packed with blueberries. These come together quickly and are great for grabbing on busy mornings all week.

Banana Baked Oatmeal Cups

Naturally sweet, perfectly portioned, and ideal for meal prep. Make a batch on Sunday and breakfast is handled.

| LUNCH

Mediterranean Orzo Salad

Loaded with sun-dried tomatoes, cucumber, olives, cannellini beans and feta with a simple balsamic dressing. Fresh, filling, and perfect for making ahead.

Shrimp Salad

Light, fresh, and comes together in minutes. A great option when you want something a little more elevated without a lot of effort.

| DINNER

Chicken Marinade

This marinade is a weeknight game-changer. Simple ingredients, tons of flavor, and it works on the grill or in a pan. This and this make great sides!

Balsamic Glazed Salmon

Sweet, tangy, and on the table in under 30 minutes. One of those dinners that feels fancy but is secretly very easy. I love pairing it with some quinoa and this side!

| SNACKS + SWEETS

Zucchini Brownies

Rich and fudgy with a sneaky vegetable inside. No one will ever know, and honestly they don't need to.

4-Ingredient Almond Flour Crackers

Crispy, satisfying, and made with just four ingredients. Perfect for snacking, charcuterie boards, or dipping into hummus.
