What I’m making this week (+ Cinco de Mayo ideas) 🌮💛

I just got back from a few days in Atlanta for a food blogging retreat and it was such a fun trip… so many good conversations, fresh inspiration, and really good food.

Going into the trip, I thought I’d try to stick to my calorie deficit… but I ended up giving myself some grace, enjoying the meals, and just being present and honestly, no regrets at all. Now I’m back home and easing into my regular routine again and back in a deficit.

If you’re ever in Atlanta, here are a few spots we visited and loved:Rosa (100% gluten-free Mexican!) – Such a gem if you’re gluten-free. Everything on the menu is safe and it was delish!

  • (incredible Lebanese food) – So fresh and flavorful. We ordered a mix of dips, grilled meats, and salads and everything was amazing. Perfect for sharing.
  • Ray’s on the River (right on the Chattahoochee) – This one is all about the atmosphere. Sitting by the water at sunset was unreal, and the food totally lived up to it.

Now that I’m back, I’ve been keeping meals simple and leaning into some fun, Mexican-inspired recipes with Cinco de Mayo coming up… think bold flavors, easy staples, and a mix of lighter options with a few more indulgent ones too.

These are the kind of recipes that feel a little more exciting than your usual weekly rotation, but are still simple enough to make on a busy weeknight or for a casual get-together. Enjoy!

Breakfast

  • Avocado Mango Smoothie – creamy, refreshing, and naturally sweet. Such a good way to start the day, especially as it gets warmer.
  • Red Chilaquiles – a classic, savory dish made with crispy tortilla chips tossed in a flavorful red sauce and topped with eggs. So good any time of day.

Lunch

  • Healthy Taco Salad – loaded with veggies, lean protein, and all the taco flavors you love in one big, satisfying bowl. This guac is a perfect addition, too!
  • Kale Mexican Street Corn Salad – fresh, flavorful, and packed with texture. It’s inspired by classic street corn but turned into a hearty, meal-sized salad.

Dinner

Snacks + Healthier Desserts

  • Creamy Vegan Queso – rich, cheesy, and perfect for dipping chips or drizzling over everything. For a dairy and high protein option, you'll have to try this recipe!
  • Skinny Margarita – light, refreshing, and perfect if you’re celebrating or just want something fun to sip on 🍹
