Happy Saturday Reader! I just got back from a few days in Atlanta for a food blogging retreat and it was such a fun trip… so many good conversations, fresh inspiration, and really good food. Going into the trip, I thought I’d try to stick to my calorie deficit… but I ended up giving myself some grace, enjoying the meals, and just being present and honestly, no regrets at all. Now I’m back home and easing into my regular routine again and back in a deficit. If you’re ever in Atlanta, here are a few spots we visited and loved:Rosa (100% gluten-free Mexican!) – Such a gem if you’re gluten-free. Everything on the menu is safe and it was delish!
Now that I’m back, I’ve been keeping meals simple and leaning into some fun, Mexican-inspired recipes with Cinco de Mayo coming up… think bold flavors, easy staples, and a mix of lighter options with a few more indulgent ones too. These are the kind of recipes that feel a little more exciting than your usual weekly rotation, but are still simple enough to make on a busy weeknight or for a casual get-together. Enjoy!
